The difference, by ear
Epic doom is doom with an operatic singer and a grander arrangement. Doom proper is bleaker, more blues-derived and much less theatrical.
Both are sung cleanly, but doom metal swings further either way: 50 to 110 bpm against 60 to 100. To hear the difference, play Candlemass next to Black Sabbath. Epic doom grew out of doom metal, four years later.
