The difference, by ear
Symphonic metal is slower, mid-tempo and frequently female-fronted. This is fast, and the orchestration has to keep up with double kick.
Both are sung cleanly, but symphonic metal is slower: 110 to 160 bpm against 150 to 200. To hear the difference, play Rhapsody of Fire next to Nightwish. They share a root in heavy metal and arrived in the same year. Finland appears in the origins of both.
